THE RESORT'S selection of restaurant and lounges presents
the flavours of the tropics in distinct atmospheres to suit every
taste. For fine dining, Jasmines serves 'Jamasian' cuisine, a marriage
between Jamaican ingredients and Asian techniques. More intimate
evenings are enjoyed in Horizons, which presents island-inspired
dishes indoors or under the stars.
Mango's offers casual poolside dining with a choice of American,
Caribbean and international dishes while the Reggae Jerk Centre
allows you to savour traditional Jamaican specialties beachside.
A favorite spot for premium rums and fine cigars is Cohoba's. The
lobby terrace serves cocktails, tropical drinks and light fare,
a relaxing setting overlooking the Caribbean Sea.
Finally, The White Witch Restaurant, set atop the green hills of
the golf course, offers a casual dining menu enhanced by breathtaking
views of the mountains and the ocean.
Some of the many achievements and opportunities over the years
include managerial and line employee cross-training overseas; task
force assignment to assist United States properties in need of specialised
support in culinary and service; importing international wine makers
to educate ladies and gentlemen on wine industry; field trips to
local producers to educate employees about key local brands; after
just one year, ranked number one in Ritz-Carlton world in efficiency
and speed of service by Gallup; provided training and support for
one of our culinarians, Nickardo Whitlock, who represented Jamaica
in the World Skills Competition in Helsinki in 2005, Nickardo received
a gold medal in culinary display; appeared in high end magazines
such as Food & Wine Magazine, Continental Magazine, Travel &
Leisure, The Golfer among others.
FOOD AND BEVERAGE EXCELLENCE
The food and beverage team has exceeded the company's expectations
and standards by engaging in over 1,032 online and training sessions
in wines (approximately 525 hours on line).
Recently, in conjunction with Caribbean Producers and Concha Y
Toro, one of Chile's largest wine producers, two employees who have
successfully participated in the online wine training sessions,
will be flown to Santiago de Chile for a three-day all-expense-paid
hands-on training at Concha Y Toro.
